As far as the spinlock cleats go, at times when it is blowing out 
you will need to have to put the halyards on the winch for sail 
shape. My cluches are located about 2'-0" away from the winches. I 
dont think that the cluches need to be centered with the winches as 
much as the deck organizers you have. My winches are a good 1'-6" to 
2'-0" back from the edge of the cockpit. Give yourself elbow room 
here. That would be how I would measure it off.

As for the rigging starting on the port side. 
Main halyard - from mast to organizer to cluch
Genoa halyard - from mast to organizer to cluch
boom vang- 6to1 block on deck to organizer to cam cleat
Cunningham- 6to1 attached to mast base to cam cleat

Starboard side rigging
Jib Halyard from mast to organizer to cluch
Spinnaker Halyard from mast to organizer to cluch
Topping lift- from mast to organizer to Green cam cleat
Down Haul- block at base of babystay to Red cam cleat.

I almost would want to add a cam cleat to the end of the Spinnaker 
halyard for more control of takedowns or twist, this way you could 
cleat it fast and clear the jam or have more control of takedowns by 
letting the sheet glide thru your hands. You could put an exit on 
the starboard side of the mast, with a cam cleat mounted there. This 
way the fordeck has control over the takedowns and raises. This 
summer we had someone on the S2 that didn't have gloves on. and when 
she released the halyard the rope burned her hands, then letting go 
of the spinnaker into the water. it was like pulling up a 1000 lb 
anchor. Not very fun but a lesson learned.

These are just my thoughts, I dont race the San Juan, Gil or 
somebody else will have allot more input than I will. Just try to 
keep it simple :)
